Midori in Japanese means "Green" in honor of the dominant colour that surrounds one of the oldest Japanese restaurants in the country, between the huge garden of Penha longa Resort and the magical Serra de Sintra.
In the “new” Midori, inaugurated in 2017, everything was thought out to the last detail. The room was redone for that opening, but the restaurant had its origins 25 years earlier. All that has remained from the old Midori is its essence – the quest to be different, exclusive. Now that exclusivity has been reinforced and can be seen in every detail, starting right at the entrance.
The restaurant’s refined decor, allows attention to be focused on the kitchen, dishes and service. The Japanese-Portugal intercultural relationship is reflected in the hand-painted mural that symbolizes the arrival of Portuguese sailors in Japan in 1543, in addition to the 3D undulating wall panels that represent the sea and a reflect a unique cuisine, one which is not fusion, but distinct: Japanese with Portuguese touches.
The open kitchen helps to reinforce the proximity between diners and the Midori team. The space overlooks the surrounding Sintra Mountains, and the nature views are simply breathtaking.

Pedro has been passionate about the culinary arts from a very young age. From his mother's traditional Portuguese cooking to the produce grown in the farms surrounding his childhood home, everything served as inspiration to him.
Inspired by his mother’s traditional Portuguese cooking and the fresh produce grown on the farms surrounding his childhood home, Pedro’s passion for the culinary arts began at a very early age and since he was very young there was no doubt in his mind that his future would involve pleasing the palate of others.
His love of Japanese cuisine, however, came later in life, whilst working with Paulo Morais, one of the best sushi chefs in Portugal at the time. Discipline, perseverance and attention to detail only served to further Pedro’s enthusiasm for Japanese gastronomy.
In 2011 Chef Pedro was in charge of the opening of Momo restaurant at Casino Lisboa and shortly after was hired by Penha Longa Resort as Junior Sous Chef of Midori. In this restaurant, Pedro Almeida discovered the inspiration and foundations for a fusion cuisine between Portugal and Japan.
On a research trip Pedro Almeida traveled to Japan, Osaka, Kyoto and Tokyo where he was not only enchanted by the culture and landscapes, but also by the diversity of flavors and textures of Japanese cuisine.
From there he brought ingredients, cooking techniques and, above all, ideas for new dishes, which are now constantly being tried and tested in the Midori kitchen.
